Day 10: Fish Tacos

Day 10 of The Abs Diet Challenge: Fish Tacos – Fish are friends NOT food! Anyway todays recipe is Fish Tacos, very simple and quick to prepare and the best part is this: at only 128 calories per taco, you can really chow down.

I remember having fish tacos down in Vera Cruz and Puerto Vallarta during spring break when I was in high school. They were incredible with freshly squeezed lime juice and salsa. I can’t say these taste exactly the same as those did- but they are pretty damned close! The nice thing about these tacos  is that since they are so low calorie, you can spend the extra calories on a Corona to go with them.

Here Is What You Will Need:

  • 2 frozen grilled fish fillets, cajun- or blackened-style
  • 4 small corn tortillas
  • 1 cup chopped baby spinach
  • 4 tablespoons reduced-fat grated Mexican-blend cheese  (I opted out of this as I am lactose intolerant)
  • salsa
  • Directions:

    1. Microwave fish according to package instructions. Slice fillets into strips, then divide evenly among four tortillas. Top with spinach, 1 tablespoon of heese, and salsa to taste.

    NB: Now I personally do not like microwaves for any but the most basic culinary tasks, softening butter, thawing, etc. I cooked my fillets in a plain non-stick pan it takes slightly longer, maybe 10 min tops – but the result is worth it. You know what you are putting into the fillet as opposed to the frozen boxed nonsense.
